Quick and Easy Best Vegan WFPB Alfredo Sauce



This is by far my favorite cheeze sauce. I use cauliflower and cashews to make it low fat and health. It comes together in the Thermomix® in minutes and it’s always delicious.

It’s versatile. I love it with steamed kale, baked potatoes and even pasta.

Recipe:

1 head cauliflower
5 garlic cloves
1 onion
2 oz cashews
16 oz soy milk
juice of 1 lemon
2 oz nutritional yeast

1. Roast cauliflower in oven for 30 mins at 375
2. Add garlic to Thermomix® and chop on speed 6 for 3 seconds
3. Add onion in quarters and chop on speed 5 for 10 seconds
4. Scrape down sides and cook mixture on varoma with splash guard for 5 minutes
5. Add remaining ingredients including roasted cauliflower and blend on speed 10 for 3 minutes
6. Enjoy
